Tuna Fritters Recipe

 

New year, new you? If healthy eating was one of your New Year's resolution, try this tasty Tuna Fritter recipe by our friends at Sydney Food Sisters, featuring Rio Mare Tuna!  

INGREDIENTS

Makes approximately 12 fritters

  •  250g boiled potato, mashed and cooled
  • 1 x 160g tin Rio Mare Tuna in oil, drained
  • 1 teaspoon lemon rind
  • 2 tablespoons sun-dried tomato paste
  • 1 large egg, beaten
  • 2 spring onions, finely chopped
  • 2 tablespoons finely chopped parsley
  • 100g feta, crumbled
  • Salt & pepper, to taste
  • 1 tablespoon plain flour
  • Olive oil, for frying

INSTRUCTIONS

  1. Mix together all the ingredients in a bowl. Refrigerate for 30 minutes.
  2. Form into patties of your desired size. A heaped tablespoon measurement make a great finger food size. Alternatively, a larger round disc make for great burger or sandwich patties.
  3. Heat oil in a medium size fry pan. The fritters are best shallow fried, in approximately half a centimeter high of olive oil. Place the patties in the frying pan, ensuring you don’t overload the pan, and that there is ample space between them. Fry until golden on one side, approximately 2-3 minutes, before flipping and frying on the other side.
