Vanilla Overload Fudge Recipe


Rich, decadent fudge with a punchy vanilla flavor. Made using real vanilla with the gorgeous speckle of vanilla bean seeds throughout.


  • 3 ½ cups caster sugar
  • 125g butter
  • 2 tbsp golden syrup
  • ½ cup milk
  • 1 tsp salt
  • 200g sweetened condensed milk
  • 3 tsp Heilala Baking Blend Vanilla Paste with added Natural Flavour


  1. Grease and line a 20cm cake tin.
  2. In a medium saucepan on low heat, add sugar, butter, golden syrup, milk, salt and condensed milk.
  3. Heat until the sugar has dissolved, stirring constantly.
  4. Bring to a gentle boil, cooking for 10-15 minutes, or until it becomes thickened.
  5. Remove from heat and add vanilla paste. Leave to cool for 5 minutes.
  6. Using an electric mixer, beat for 10 minutes, or until fudge is creamy and thick.
  7. Pour into lined tin and leave to cool.
  8. Refrigerate and cut into squares once set.
