Westminster Cave Aged Cheddar is matured 200 feet underground in the Wookey Hole Caves in the Somerset Mendip Hills.
The naturally constant temperature and humidity of the caves offer the ideal conditions for storing and maturing cheddar. The porous nature of the cheese enables it to take on distinctive earthy and nutty flavours from the surrounding atmosphere. This delicious cheddar is firm and cream-coloured. The aroma is a complex mix of sweet, creamy, farmy and earthy. The flavours are big, robust and well rounded with competing notes such as sweet and salty.
