Grana Padano & Coconut Crumbed Prawns
'Tis the season for trying new recipes! Here's a great one for festive entertaining.
Ingredients
12 large green king prawns, peeled, deveined, tails intact
Wooden skewers, to serve
1/2 cup plain flour
2 eggs, beaten
3/4 cup Grana Padano DPO, finely grated
3/4 cup shredded coconut
3/4 cup Panko breadcrumbs
Vegetable oil, for shallow frying
Lemons, to serve
Instructions
Place each prawn flat on a cutting board, leg-side down and press down until it lies flat and straight. Insert a wooden skewer from the tail to the head.
Set up a breading station. Place flour in one shallow dish, beaten eggs in a second dish and Grana Padano, shredded coconut and panko crumbs together in a third dish. Working one skewer at a time, dredge lightly in flour and shake off excess. Dip in egg and turn to coat evenly. Place in Grana Padano mixture until well coated. Repeat with remaining skewers.
Heat oil in a large wok or deep fryer to 160 degrees Celsius. Add prawn skewers, 3 at a time until golden and crispy - approximately 1 minute. Transfer to a paper-towel lined baking sheet. Sprinkle with extra grated Grana Padano and serve immediately with lemon wedges.
