Grilled Peach & Grana Padano Summer Salad

Ingredients
2 tablespoons Filippo Berio Olive Oil2 tablespoons caramelised balsamic vinegarSalt, for seasoningPepper, for seasoningExtra olive oil, for grilling4 small peaches, cut into large wedges8 thin slices Prosciutto1/2 cup basil leaves100g Grana Padano DPO (cut into chunks)
Instructions
To make the dressing, whisk together the oil and balsamic vinegar in a small bowl. Season with salt & pepper and set aside.
Preheat a grill pan and brush with the extra olive oil. Grill the peaches for approximately 1-2 minutes per side. Remove them from the grill and transfer to a large serving platter. Add the slices of prosciutto and basil leaves to the platter and top with the Grana Padano. Drizzle generously with the dressing.Recipe by Sydney Food Sisters.
