Simple, healthy and incredibly flavoursome. This vibrant Basil Parsley Pesto is crafted with Maldon Sea Salt. Perfect with crunchy vegetables, pasta or just about anything!
Ingredients
50g parsley leaves50g basil leaves2 garlic cloves, roughly chopped50g pine nuts, toasted4 grinds of Maldon Sea Salt Flakes185ml Extra Virgin Olive Oil 80g good quality Pecorino or Parmesan cheese
Instructions
Place the parsley, basil, garlic, salt and pine nuts in a food processor. With the motor running, add the oil in a steady stream until all the ingredients have combined well, and the consistency is still a little chunky.
Transfer to a bowl and stir in the Pecorino or Parmesan cheese. Season with additional salt, to taste. Store in a sealed jar in the fridge.
