Ingredients
Chilli Lime Feta Spread
200g Mayers Goat Milk Feta Cheese
50g whole egg mayonnaise
1 long red chilli, deseeded and finely chopped
2 tablespoons coriander, finely chopped
1 tablespoon lime juice
½ teaspoon finely grated lime zest
Smoky Paprika Chilli Butter
150g Lurpak butter, softened
1 teaspoon paprika
1 teaspoon brown sugar
½ teaspoon chilli flakes
1 garlic clove, crushed
Cracked pepper
4 corn cobs
Lime halves
Coriander leaves
Instructions
To make the feta spread, mash the feta cheese with a fork and transfer to a bowl. In a separate bowl, mix the mayonnaise, chilli, coriander, lime juice and lime zest until well combined. Mix that into the mashed feta until well combined. Refrigerate until ready to use.
To make the smoked paprika butter, place the butter, paprika, sugar, chilli flakes, garlic and pepper in a food processor and beat until smooth and well combined.
Pull back the husks of the corn and tie using a thin piece of corn husk. Remove the silks of the corn. Brush the corn cobs liberally with the smoky butter. Cook on a hot barbecue or a hot char grill pan until the corn is well charred on all sides.
Transfer to a serving dish and serve with the feta spread, lime and coriander leaves.
