• Herbed Tuna Baguette

A simple, yet flavoursome, lunch option that will be ready in mere moments. Try this tasty Herbed Tuna Baguette featuring Rio Mare Tuna.

Ingredients

2 x 160g tins Rio Mare Tuna in Olive Oil
1 tablespoon extra virgin olive oil
1 tablespoon fresh lemon juice
1 red onion, finely diced
3 shallots, finely sliced
1 cup parsley, finely chopped
1 long red chilli, finely sliced
Salt & pepper, to taste
Additional olive oil, for drizzling

Instructions

Mix all the ingredients in a bowl until well combined.

Slice the baguette in half. Using the additional extra virgin olive oil, drizzle the insides of the baguette with olive oil. Place the filling onto the baguette.

The baguette can be enjoyed as a closed baguette, or as a sliced open baguette.
