A simple, yet flavoursome, lunch option that will be ready in mere moments. Try this tasty Herbed Tuna Baguette featuring Rio Mare Tuna.
Ingredients
2 x 160g tins Rio Mare Tuna in Olive Oil1 tablespoon extra virgin olive oil1 tablespoon fresh lemon juice1 red onion, finely diced3 shallots, finely sliced1 cup parsley, finely chopped1 long red chilli, finely slicedSalt & pepper, to tasteAdditional olive oil, for drizzlingInstructions
Mix all the ingredients in a bowl until well combined.
Slice the baguette in half. Using the additional extra virgin olive oil, drizzle the insides of the baguette with olive oil. Place the filling onto the baguette.
The baguette can be enjoyed as a closed baguette, or as a sliced open baguette.
