A traditional La Mancha cheese made from premium ewe’s milk, offering a sweet, milky flavour and delicate herb-infused aroma far removed from industrial varieties. Wrapped in its namesake esparto grass mould and coated in natural charcoal, it is aged for six months in underground stone caves, where airflow from herb-filled greenhouses subtly enhances its character. The result is a moist, ivory interior with a rich buttery finish and lingering notes of caramel and almonds.
