• Rio Mare Tuna Salad

A fast, fresh and simple recipe that you can have on the table in minutes. Featuring Italy's favourite tuna - Rio Mare.

Serves 4

Ingredients

1 cos lettuce, cut into quarters lengthwise
2 x 180g Rio Mare Tuna Fillets in Olive Oil
175g baby beans, blanched
8 small chat potatoes, boiled & halved
4 eggs, boiled and halved
250g baby medley tomatoes
3/4 cup green olives

Dressing
1/2 cup whole egg mayonnaise
2 teaspoons Dijon mustard
2 teaspoons red wine vinegar
Oil from the 2 Rio Mare Tuna fillet jars

Instructions

The salad can be presented deconstructed, so that everyone can piece together their desired portion, or mixed altogether.

Place all the ingredients on a large platter, ensuring the tuna fillets are positioned in the centre of the bowl.

Mix all the dressing ingredients together in a small jar or bowl, ensuring they are well combined. Drizzle the salad with the dressing, or serve alongside the platter for everyone to drizzle.
